Introducing Korea's delicious convenience foods #2

Soon Tofu Stew, Bibimbap, and Tteokbokki


Hello, everyone! Today, I'd like to introduce three representative Korean dishes. Let's take a closer look at the recipes and ingredients for making Soon Tofu Stew, Bibimbap, and Tteokbokki at home.


1. Soon Tofu Stew

Ingredients:

Fresh Soon Tofu 1 block

1 green onion (chopped)

1 piece of dried kelp (5x5cm)

5 dried shrimp (optional)

1 tablespoon red pepper paste (gochujang)

1 tablespoon soybean paste (doenjang)

1 tablespoon soy sauce

1 tablespoon minced garlic

1 teaspoon salt

3 cups water or broth

Instructions:

In a pot, bring water or broth to a boil, add dried kelp, and simmer.

Once it starts boiling, add dried shrimp and boil for an additional 5 minutes.

Remove the dried shrimp to enhance the flavor.

Add minced garlic, red pepper paste, soybean paste, soy sauce, and mix well.

Add chopped green onions, bring to another boil.

Tear the Soon Tofu into large pieces and add to the pot. Close the lid and let it simmer for 10 minutes.

Open the lid, add salt to taste, garnish with chopped green onions, and it's ready!

2. Bibimbap

Ingredients:

2 cups cooked rice

100g beef (sliced for bulgogi)

1 carrot (diced)

1/2 cucumber (diced)

1 bunch of spinach (blanched in oil with a pinch of salt)

1 egg (fried into a thin omelet)

1 tablespoon sesame oil

2 tablespoons soy sauce

1 tablespoon sugar

2 tablespoons vinegar

2 tablespoons red pepper paste (gochujang)

Instructions:

Heat sesame oil in a pan, add beef and stir-fry.

Add diced carrots and cucumbers, stir-fry.

Mix soy sauce, sugar, vinegar, and red pepper paste to make sauce; add it to the pan and stir-fry.

Place rice in a bowl, top with stir-fried ingredients.

Finally, add the thin omelet on top, and it's ready!


3. Tteokbokki

Ingredients:

300g rice cakes (tteok)

100g fish cakes (odeng)

2 green chili peppers

1 onion

1 green onion

2 tablespoons bread crumbs

10 dried anchovies for broth

4 cups water

Sauce Ingredients:

4 tablespoons red pepper paste (gochujang)

2 tablespoons red pepper flakes (gochugaru)

3 tablespoons soy sauce

2 tablespoons sugar

1 tablespoon minced garlic

1 cup anchovy broth

Instructions:

Cut fish cakes, green chili peppers, onion, and green onion.

In a pan, add dried anchovies, pour 4 cups of water, and bring to a boil.

Add rice cakes and fish cakes; boil for an additional 5 minutes.

Mix the sauce ingredients and add to the pan, stir well.

Add green chili peppers, onions, green onions, and bring to a boil.

When boiling, sprinkle breadcrumbs to finish it off!
